Pineapple Guava Mousse


INGREDIENTS:
  • Condensed milk – 400g
  • Egg whites - 3 units
  • Cream - 400g
  • SAS Pineapple Guava pulp - 460g
  • Unflavored gelatin - 15g
  • Water - 200m

PREPARATION:

In a bowl stir the egg whites until firm peaks are formed. In another bowl, mix the condensed milk, cream, SAS Pineapple Guava pulp and half the water until a thoroughly homogeneous mix is obtained. Aside, use the remaining water to hydrate the gelatin and then integrate it into the mix. Then, gently, incorporate the egg whites mix. Finally pour into a pan and refrigerate. It can be served accompanied by a blackberry coulis and garnish with mint leaves.
